Plastic free gnocchi! (Hey that rhymes!)
2 lbs Yukon gold or Russet potatoes
2 Cups flour
2 tsp. salt
2 T. melted butter
1 large (fresh from the chicken) egg
Boil potatoes until soft
Peel the potatoes
Mash them up with pastry cutter
on flat surface mix flour and salt
Form a well, add potatoes ,and beaten egg
Mix all ingredients with your hands
Form into long snake ( like play doh days)
Cut into 1 inch pieces
roll edge of fork against each piece
Drop into boiling salted water
When they float take them out they are done! Enjoy with home made pesto and Parmesiano Reggiano cheese.
